These lovelies are quick and easy to make! I have been making these over the last few weekends and they are delicious. I initially made it with more sugar but it was way to sweet so cut it down significantly. Even my little sister loved them. These are great as quick morning bites, lunch time companions or afternoon snacks.
Banana Hemp Muffins
(recipes and ingredients are always vegan; always organic unless noted otherwise)
3 large ripe bananas or 4 small
1/4 cup oil (safflower, canola, even olive oil if its extra virgin and light)
1/2 cup cane sugar
2-3 TBs almond milk
2 cups spelt flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1/3+ cup raw hemp seeds
Preparation:
1. Preheat oven to 375 degrees. Grease a muffin pan and put to the side.
2. In a large bowl, mash the bananas until pureed. Add sugar, oil and mix together until well incorporated. Slowly stir in milk.
3. In a separate bowl, combine the dry ingredients; flour, baking power, baking soda, salt, and hemp seeds.
4. Combine the dry ingredients with the pureed bananas mix.
5. Fill each muffin 1/2 full for small muffins, 3/4 full for large muffins. Bake 18-20 minutes. Continue to check as they do sometimes bake quickly depending on your oven.
Some additions I’ve done over the last few weeks (not all together): 1/2 cup fresh blueberries, 1/2 cup walnuts for his and her muffins (walnuts for the his, blueberries for the her), dried blueberries, dried cranberries.
