Even though I don’t consumer sugar currently, that doesn’t mean I can’t dream about it! And today, June 20th, is National Ice Cream Soda Day. So I decided to create this dreamy recipe merging mango and ginger. Sweet, bold, strong, and sassy just like summer. Enjoy!
Ingredients
2 TB Ginger Mango Syrup
Pint of Dairy Free Ice Cream: Can be mango, ginger, or whichever flavor you like
Ginger Ale or Beer
Half a Lime
Ginger Mango Syrup
2 cups of organic cane sugar
6 inch piece of ginger – diced
1 – 1 1/2 cup pureed mango
2 cups water
Place sugar, ginger, pureed mango, and water in a medium saucepan.
Bring to a boil. Reduce to a simmer, and cook for one hour.
Let cool. Strain or remove ginger pieces before using.
Float
Use a tall glass, add small amount of ginger ale or beer, and pour in the ginger mango syrup, and mix well.
Add 2 scoops of ice cream and fill to top with ginger ale or ginger beer.
Squeeze a slice of lime on top.
